Breakfast

A healthy combo. Great for breakfast.

Flour-less Chicken Strips (recipe from this link)

These chicken strips were so good! They were breaded with eggs, instead of flour, for extra flavor and protein. I then topped the strips with homemade teriyaki sauce, which added a flavorful sweetness. 

The entire meal was finger-licious! I enjoyed it. My family enjoyed it too.

Afternoon Snack

Dried Apricots and Blue Cheese (here's the recipe)

Blue cheese is an acquired taste--and I'm glad to have acquired a taste for it. It's sharp, potent and definitely satisfies the adult palate. Because of its relative bitterness, blue cheese tastes superb with something sweet, namely today's apricots. 

I chose Turkish apricots. Mine were from a local organic grocery store. They're also sold at Whole Foods or Trader Joe's.

Dinner

Tomato, Egg & Shrimp Stir Fry (get recipe here)

Tomato and egg stir fry is a traditional Chinese dish. Growing up, my family made it all the time. It has a sweet and tangy flavor, with a smokey Asian twist. It tastes great with rice.

Today's tomato and egg stir fry is a variation of my family's traditional recipe. I added bits of shrimp to add both flavor and bulk. Plus, shrimp is a great source of protein, as well as a clean eating favorite.
